The Pyrenees form a unique ecosystem that has given rise to one of the most remarkable culinary traditions within the realm of mountain cuisine. In this book, we focus on the Catalan Pyrenees—encompassing the Principality, the Aran Valley, and Northern Catalonia—while also touching upon the Occitan Pyrenees and, naturally, Andorra, "the country of the Pyrenees." We explore the region's various districts and areas, immersing ourselves in its culinary heritage—its products and dishes—and its calendar of gastronomic festivals. We present 141 mountain cuisine recipes, ranging from starters, sauces, soups, and stews to dishes featuring mushrooms, snails, rice, and meats, alongside many other specialties such as desserts, preserves, and mountain cheeses.
